The Four New "It" Foods You Should Be Eating

Shredded Brussel Sprout Salad with Walnuts + Apples
1 1/2 lbs of raw shredded brussel sprouts
1 cup walnuts, lightly toasted and coarsely chopped
2 Tbsp of finely grated pecorino romano cheese (optional)
1 apple, sliced in half, seeds removed, then sliced thinly
6 Tbsp of EVOO
3 Tbsp of fresh squeezed lemon juice
1 Tbsp of honey
Season with sea salt, and freshly ground black pepper 


 

3. Farro is the new quinoa - The beloved ancient grain, and a favorite of Italy, Farro is calcium-rich, super charged with protein, fiber, magnesium, and B vitamins. It's earthy flavor, and different texture makes it a great option, hot or cold. 


4. Cauliflower is the new steak - This cruciferous cousin of broccoli is low in calories,  and contains potent compounds know to fight inflammation and cancer. It's high amount of antioxidant nutrients prevent free radical cells from damaging cells.  Cauliflower is a blank canvas - try adding your favorites like ginger, turmeric, and cumin to Spice it up!  It's versatility is moving cauliflower to the center of the plate!
